Go to the shop- If serving into a ceramic cup, preheat the cup using the hot water jet on the espresso machine.
- Remove portafilter from group head and flush
- Wipe brew basket clean and dry using the dedicated portafilter towel
- Fill and level brew basket to desired dose of fresh, finely ground coffee
- Tamp firmly, applying 30lbs of pressure [BB1]
- Clean loose grounds off portafilter surfaces
- Insert the portafilter into the group head
- Start the pump and brew immediately into intended serving vessel
- Observe the flow, the end result should be close to a 1:2 ration (Coffee to water, typically 18:36g), brewed at roughly 20-30 seconds
- Serve, or combine with other ingredients to make an espresso-based beverage
- Remove portafilter and knock out spent coffee
- Wipe basket clean (rinse optional) & flush group head.
- Return portafilter to group head to keep portafilter heated.
