While visiting Antigua Guatemala we had the good fortune to meet Mario Rodas and his family. Mario’s mother, Lucrecia, inherited a coffee farm in the heart of Antigua and built a world class micro mill and cupping facility. Their love and investment stand as a shrine to coffee. This lot was processed on the family’s drying roof facility, above the processing mill. The crew was meticulous in rotating, covering, and slowly drying these cherries to produce the complex yet familiar flavors of this coffee.
