Tai Ping Hou Kui, known as Monkey King green tea in the West, has only a 20-day harvest window from mid-April through the end of April, just before the rainy season begins. To keep its freshness, the tea cannot be plucked when the sun comes so it's harvested from 5am - 9am. Our source, Ms. Lin, has been involved in the tea industry for more than 10 years. She specializes in different yellow teas and green teas made in the Huang Shan (Yellow Mountain) area, Anhui province of China.
Since the leaves are much longer than most other teas, it's hard to measure your leaf quantity by traditional methods such as a teaspoon. We recommend weighing it on a scale in grams for accuracy. Use 3-4 grams with 8-12 ounces of water at a temperature of 175-195 degrees F. Steep for 2-3 minutes before drinking.
Monkey King is mellow, soothing, and rejuvenating with a low caffeine level.
