Coffee Roots
Abdul’s coffee business Ketam, is located in Western Ethiopia's Limmu Kossa District, in the highlands of the Kebena Forest. This 1,000 hectare farm was established in 2009 as a land grant from Ethiopia's investment agency to safeguard some of the last remaining dense forest in the country. His first harvest was 2016 and we have bought his coffee since, entranced by his qualities and the cup.
We are fortunate to have this experimental lot available for our customers. Using only the ripest cherries, Abdul and Moata processed this gem with great success. They first picked ripe cherries from his 74110 variety plants.
The cherries were laid out on raised beds, and for the first four days were spread very thin (one cherry thickness). The following days they increased the thickness of the layers every few days, until the coffee cherries were dried. The result is a brilliant cup with tangerine notes and deep fruit complexity.
